  • 3-4 ounces Milk of choice
  • 1-2 ounces of chai tea concentrate

For the cold foam

  • 2 ounces heavy cream
  • 3/4 ounce pumpkin syrup
  • Top with cinnamon

Pumpkin syrup

ingredients

  • 1 cup water
  • 1 cup sugar
  • 5 cinnamon sticks
  • 1 tablespoon ground ginger
  • 1 tablespoon cloves
  • 1 tablespoon ground nutmeg
  • 2 tablespoons pumpkin purée

Pumpkin Syrup

Method

  • Step 1

    In a saucepan, combine the water and sugar over medium heat. Stir until the sugar dissolves completely.

  • Step 2

    Add the cinnamon sticks, ground ginger, ground cloves, and ground nutmeg to the saucepan. Stir the mixture well to combine all the spices.

  • Step 3

    Add the pumpkin purée to the saucepan and whisk it into the mixture until it's fully incorporated.

  • Step 4

    Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 10-15 minutes. Stir occasionally to prevent sticking.

  • Step 5

    Once the syrup has thickened slightly and the flavors have melded together, remove it from the heat.

  • Step 6

    Allow the syrup to cool to room temperature in the saucepan.

  • Step 7

    Once it's cooled, strain the syrup through a fine-mesh sieve or cheesecloth to remove any solid particles and cinnamon sticks. Transfer the strained syrup into a clean glass jar or bottle. Seal it tightly and store it in the refrigerator.

  • Step 1

    Froth the heavy cream, and pumpkin syrup until thick and fluffy.

  • Step 2

    In a glass with ice, add the milk and tea. Top with cold foam and enjoy!
