ingredients
- 1/4 cup soy sauce
- 1/4 cup lime juice
- 2 tablespoons gochujang
- 2 tablespoons prepared garlic-ginger paste, divided
- 1 teaspoon sesame oil
- 1 package extra firm tofu, cubed
- 1 onion, diced
- 1 package Cascadian Farms Organic Frozen Powered By Plants Farro, Sweet Potatoes, Black Bean & Spinach
- 2 tablespoons Italian parsley
Method
Step 1
In a bowl combine soy sauce, lime juice, gochujang, 1 tablespoon garlic-ginger paste and sesame oil. Add tofu, cover, and chill in the fridge for at least an hour.
Step 2
Preheat an air fryer to 400 degrees F for 15 minutes. Remove tofu from marinade and add to air fryer. Cook for 15 minutes. Set aside leftover marinade.
Step 3
In a large pan add 1 tablespoon of water, onion and remaining tablespoon garlic-ginger paste. Cook until onion softens.
Step 4
Add Cascadian Farms Organic Frozen Powered By Plants Farro, Sweet Potatoes, Black Bean & Spinach , cover and cook for 13-16 minutes, stirring occasionally.
Step 5
When farro blend is finished, add reserved marinade. Remove from heat, top with tofu and parsley. Enjoy!
