Shakshuka is one of those great dishes that can be eaten any time of day. Enjoy it during the week for a quick and easy meal or double the recipe for brunch with family or friends. Serve with a side of pita bread and a green salad and it is sure to be a hit!
1 tsp olive oil 1 clove garlic, chopped 1 cup marinara sauce 1/2 tbsp fresh parsley, chopped pinch red pepper flakes (adjust for spiciness) 2 eggs naan bread or crusty bread In a small skillet, heat olive oil over medium heat. Add garlic and cook until softened, about 1-2 minutes. Add marinara, parsley and pepper flakes and heat to simmer. Slowly drop in eggs, cover and simmer for 6-8 minutes or until eggs are set. Season with salt, pepper and additional parsley, if desired. Serve with bread.
