ingredients
- 1 1/2 cups all purpose flour
- 14 tablespoons cold butter
- 1 cup plus 2 tablespoons powdered sugar
- 2 large egg yolks
- Zest of 1 lemon
- Zest of 1 orange
- 1 teaspoon vanilla extract
- 5 - 7 tablespoons apricot jam
Method
Step 1
In a bowl of a stand mixer machine, place the sifted flour and cold butter. Using the paddle attachment, whisk the ingredients together until a sandy texture forms. Next, add in the egg yolks, lemon zest, orange zest, vanilla, and powdered sugar. Mix on high speed for a few seconds until a crumbly dough forms.
Step 2
Transfer the dough to your worksurface and knead together until it is compact and holds together well. Form the dough into a ball and place into a bowl in the fridge for 30 minutes.
Step 3
Preheat the oven to 350℉. Line a rimmed cookie sheet with parchment paper.
Step 4
Once chilled, remove the dough from the fridge, and roll it out on a floured surface until it's about 1/8" in thickness. Use a flower-shaped cookie cutter and cut flower cookies. Make a tiny hole in the center of half of the flower-shaped cookies. You can use a toothpick, straw, or piping tip to make the hole.
Step 5
Place the cookies onto the prepared pan. Refrigerate the cookies for 15 minutes. Then, bake for 12 minutes.
Step 6
Once the cookies have baked and cooled to room temperature. Turn the cookies over. Place a teaspoon of apricot jam into the center of a full cookie (aka, a cookie without a hole). Then, place the cookie with the hole over the jam, to make a sandwich. Repeat with the remaining cookies.
