Roasted Eggplant Feta Salad

This salad is easy and very delicious! Roasted eggplant is very simple to make, you only need 45 minutes for the perfect texture. You only need to cute the other ingredients and you have a nice dish. Few ingredients for a fresh result. I promise, you will do it all the time. -@tastyandfrenchy

ingredients

  • 1 large eggplant, cubed
  • 2 tablespoons canola oil
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/3 cup crumbled feta
  • 6 leaves basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper

Method

  • Step 1

    Preheat oven to 400ºF. Line a baking sheet with parchment paper. Toss eggplant with canola oil, salt and pepper. Spread in even layer on baking sheet and bake for 45 minutes. Let cool for 15 minutes.

  • Step 2

    Mix eggplant, bell pepper, feta and basil in a big bowl. Toss with olive oil, balsamic, salt and pepper. Ready to serve!
