ingredients

  • 1 large eggplant, cubed
  • 2 tablespoons canola oil
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/3 cup crumbled feta
  • 6 leaves basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper

Method

  • Step 1

    Preheat oven to 400ºF. Line a baking sheet with parchment paper. Toss eggplant with canola oil, salt and pepper. Spread in even layer on baking sheet and bake for 45 minutes. Let cool for 15 minutes.

  • Step 2

    Mix eggplant, bell pepper, feta and basil in a big bowl. Toss with olive oil, balsamic, salt and pepper. Ready to serve!
