Burrata, Melon Couscous Salad

  • 1/4 cantaloupe
  • 1/2 large avocado
  • 1/3 cup couscous
  • 1/3 cup cooked chickpeas
  • 1 ball burrata
  • fresh basil
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  • Step 1

    Start by cooking the couscous with boiling water. Pour the dry couscous in a bowl and cover it with boiling water. Cover and let it cook for 10 minutes. Then, mix with a fork.

  • Step 2

    Deseed the melon and peel it. Cut it in pieces avocado and melon. Chop 5 big leaves of basil. Drain and rinse the chickpeas.

  • Step 3

    In a big plate, sprinkle cooked couscous, chickpeas. Divide the melon and avocado pieces. Make small pieces of burrata by hand and add them. Sprinkle chopped basil and finish with a drizzle of olive oil (about 2 tbsp) and salt and pepper. Serve.
