This fusion recipe marries the flavors of Mexican street corn with delicious deviled eggs. While it may not be a traditional dish, it's a fabulous combination of two classic snacks!

ingredients

  • 6-8 hard-boiled eggs, peeled and yolk separated
  • 1/4 red onion, finely chopped
  • 1 jalapeño, finely chopped
  • 1 cup roasted corn
  • 1/2 lime, juiced
  • 2 tablespoons sour cream
  • 3 tablespoons mayo
  • 1/2 teaspoon tajin, plus more for dipping
  • 1 tablespoon chopped cilantro
  • 1/4 cup cotija or parmesan cheese
  • Salt and pepper to taste

Method

  • Step 1

    Season your egg whites with tajin in a bowl. Set aside.

  • Step 2

    Combine the egg yolks, red onion, jalapeño, corn, lime juice, sour cream, mayonnaise, tajin, cilantro, and cheese. Mix until smooth & creamy.

  • Step 3

    Fill the egg whites with the yolk mixture. Serve fresh!
