ingredients
- 6-8 hard-boiled eggs, peeled and yolk separated
- 1/4 red onion, finely chopped
- 1 jalapeño, finely chopped
- 1 cup roasted corn
- 1/2 lime, juiced
- 2 tablespoons sour cream
- 3 tablespoons mayo
- 1/2 teaspoon tajin, plus more for dipping
- 1 tablespoon chopped cilantro
- 1/4 cup cotija or parmesan cheese
- Salt and pepper to taste
Method
Step 1
Season your egg whites with tajin in a bowl. Set aside.
Step 2
Combine the egg yolks, red onion, jalapeño, corn, lime juice, sour cream, mayonnaise, tajin, cilantro, and cheese. Mix until smooth & creamy.
Step 3
Fill the egg whites with the yolk mixture. Serve fresh!
