For the Waffles

ingredients

  • 2 tablespoons soy flour
  • 1/4 cup water
  • 2 tablespoons cane sugar
  • 2 teaspoons baking powder
  • a pinch of salt
  • 2 cups plus 2 tablespoons spelt flour
  • 3/4 cup plus 1 tablespoon and 1 teaspoon plant-based milk
  • 3 tablespoons plus 1 teaspoon sparkling water
  • 3 tablespoons plus 1 teaspoon maple syrup
  • 1 tablespoon melted coconut oil

For the Cherry Topping

ingredients

  • 3/4 cup sour cherries, from a jar
  • 2 tablespoons cane sugar
  • 1 tablespoon cornstarch

Method

  • Step 1

    To make the waffles: Preheat waffle iron. Combine soy flour and water to create thickener. Mix in the sugar, baking and salt. Once incorporated, mix in the remaining ingredients. Lightly grease the waffle iron with coconut oil, then add desired amount of batter and cook according to appliance instructions.

  • Step 2

    In the meantime make the cherry topping: Drain the cherries, saving water from the jar. Cook gently in a saucepan with the sugar, cornstarch, and a little of the reserved water. It's ready when it's thickened. Serve waffles with the warm cherry topping.
