ingredients
- 2 cups finely grated zucchini
- 2 cups brown sugar
- 2 cups spelt flour
- 1/2 cups cocoa powder
- 2 teaspoons vanilla extract
- 3/4 cups melted coconut oil
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
- 3/4 cups dark chocolate chips
Method
Step 1
Preheat oven to 180C. Line a 8x8" square tray
Step 2
Squeeze most of the water out of the grated zucchini
Step 3
Add all ingredients to a bowl and mix well with an electric hand whisk until you cannot see the zucchini anymore
Step 4
Fold in 1/2 cup of chocolate chips
Step 5
Spoon into lined tray, smooth out with the back of a spoon and sprinkle with remaining 1/4 cup chocolate chips
Step 6
Bake for 40 minutes and leave to cool completely before slicing
