Smoked Salmon and Avocado Rice Bowl

ingredients
- 3 cups cooked Japanese short grain rice
- 120 grams smoked salmon
- 1 whole avocado
- 1 whole cucumber
- 2 tablespoons sushi vinegar
- 2 tablepoons cream cheese
- 1/2 teapsoons sugar
- 1/2 teapsoons chili flakes
- 1 drizzle sesame oil
Method
Step 1
Using a peeler, make ribbons of cucumber and put them in a bowl with 2 tbsp of sushi vinegar and ½ tsp sugar. Mix and set aside in the fridge while prepping the other ingredients.
Step 2
Cut up the smoked salmon and avocado. I cut the avocado into slices for presentation but cubes are quicker and of course, still tastes great!
Step 3
Dish up the rice into two large bowls and put your salmon, avocado and lightly pickled cucumber on top. You can be creative with your presentation!
Step 4
Drizzle with sesame oil, you can add a dollop of cream cheese to the salmon here too.
Step 5
Sprinkle with chili flakes or sesame seeds and enjoy!
