"Fluffy Japanese style rice topped with smoked salmon, lightly pickled cucumber and fresh avocado then drizzled with sesame oil and a sprinkling of chili flakes. Super quick and totally delicious, add a dollop of cream cheese to make it a bit more indulgent!"

ingredients

  • 3 cups cooked Japanese short grain rice
  • 120 grams smoked salmon
  • 1 whole avocado
  • 1 whole cucumber
  • 2 tablespoons sushi vinegar
  • 2 tablepoons cream cheese
  • 1/2 teapsoons sugar
  • 1/2 teapsoons chili flakes
  • 1 drizzle sesame oil

Method

  • Step 1

Using a peeler, make ribbons of cucumber and put them in a bowl with 2 tbsp of sushi vinegar and ½ tsp sugar. Mix and set aside in the fridge while prepping the other ingredients.

  • Step 2

Cut up the smoked salmon and avocado. I cut the avocado into slices for presentation but cubes are quicker and of course, still tastes great!

  • Step 3

Dish up the rice into two large bowls and put your salmon, avocado and lightly pickled cucumber on top. You can be creative with your presentation!

  • Step 4

Drizzle with sesame oil, you can add a dollop of cream cheese to the salmon here too.

  • Step 5

Sprinkle with chili flakes or sesame seeds and enjoy!
