One of our other favorite local food producers is Goodwater Farms, who grows microgreens year round in soil. This mixed microgreen salad is a staple in our home in winter months when we can no longer get greens from our local CSAs (since the greenhouses do typically freeze in January and February).


1/2 cup white or red wine vinegar

2 tablespoons finely chopped shallots or red onions, minced

1 cup good quality olive oil

1 teaspoon of grainy mustard

1 teaspoon of local honey

½ teaspoon of Simply Organic Smoked Paprika

½ teaspoon of Simply Organic Black Pepper

Pinch of Salt


Add the above to a large mason jar. Screw on the top, shake and drizzle over salad. Reserve the rest for a future salad.
