I made these plantain waffles a while back, and might make for dinner tonight.... if you saw I stories I did just enjoy a TON of delicious sushi. Celebrated my birthday last night at a cookout at my brothers...it was an amazing night...filled with family, friends and indulgence and I am a little slow moving today...definitely ate my weight in cake and I was lucky enough to have TWO cakes made for me! Lemon and chocolate (both were grain free—-my family knows me well!) Now I’m relaxing and resting dreaming about making these in my future. Happy Sunday loves!"

ingredients
- 1/2 plantain
- 1 egg
- 3 egg whites
- 1 tablespoon coconut flour
- 1 scoop protein powder (of choice)
- 1/2 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon cinnamon
- For the toppings
- 1/2 small avocado, sliced
- Pumkin or Sesame seeds
- 1 teaspoon juice of a lemon
- 1 7 minute, boiled egg (jammy)
- 1/4 cup arugula
- pinch of red chili flakes
Method
Step 1
Blend all the ingredients together and cook according to waffle maker instructions.
Step 2
For the Toppings: add an array of toppings of your choosing. For the avocado topped waffle, layer the sliced avocado, salt and pepper to taste and sprinkle with sunflower and sesame seeds. Drizzle olive oil and a squeeze of lemon juice to taste.
Step 3
For the egg waffle: layer the arugula then the egg, add a pinch of chili flakes. Salt and Pepper to taste.
Step 4
