For the Pasta Salad
ingredients
- 1 pound gluten free penne
- 1 spinach, steamed
- 1 avocado, pitted and cut into chunks
- 12 cherry tomatoes, halved
- 4 eggs
For the Dressing
ingredients
- 1/2 cup plain Greek yogurt
- 2 tablespoons Parmesan, grated
- 2 tablespoons water
- 1 tablespoon olive oil
- 1 tablespoon sour cream
- 1 tablespoon lemon juice
- 2 teaspoons coconut aminos
- 1 teaspoon garlic powder
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly ground black pepper
For the Pasta Salad
Method
Step 1
Cook penne according to package directions. Once cooked, drain and add to large mixing bowl to cool slightly.
Step 2
Fill a small pot 3/4 of the way with water and bring to a boil. Carefully add in 4 eggs with a spider or large spoon. Prepare a large bowl with ice and cold water. Set aside.
Step 3
Cook for 6 1/2 minutes, then remove eggs from water and place into prepared ice bath. Peel eggs and slice into quarters. Reserve.
Step 4
Once pasta has cooled slightly, add steamed spinach, avocado, tomatoes and prepared dressing. Toss to combine.
Step 5
Top with jammy eggs and enjoy!
For the Dressing
Step 1
In a small bowl, add all ingredients and whisk to combine. Reserve dressing.
