"There's not enough tofu mousse in the world. So here's a recipe for my admittedly obnoxious sounding but super simple basil, blood orange cacao version."
Blood Orange Chocolate Mousse

Ingredients:
1 block (270 grams) of silken tofu, drained
120 grams high quality dark chocolate (70% +), broken into pieces
1/4 cup cacao
3 tablespoon orange juice + zest of half the orange
1/2 cup coconut sugar
3-4 sprigs of basil
Directions:
Place the heatproof bowl over a pot of simmering simmering water and melt the chocolate with cocoa powder, orange juice and sugar stirring occasionally. Once melted remove from the heat.
Blend the silken tofu in a food processor with the basil until very smooth, then gently fold into the chocolate mixture.
Divide between the serving dishes and chill for at least an hour in the fridge. Garnish with additional basil, dehydrated orange, cacao nibs or berries.
