Roasted Spiced Cauliflower

"‎‏زهره مقلية or fried Cauliflower has always been one of my favorite meals growing up. Lately, I’ve been enjoying a health(ier) version by baking it! 🌱 This Oven Roasted Spiced Cauliflower is tossed in delicious spices and tangy sauces and never fails to hit the spot. The recipe still requires a good amount of oil for the cauliflower to crisp up properly, but it’s definitely more health conscious and just as delicious as the deep fried version! 😋 Enjoy!"

ingredients

  • 1 head cauliflower, cut into florets
  • 4 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 lemon, zested (1/2 tablespoon)
  • Salt, To Taste
  • 1 cup plain yogurt
  • 1 teaspoon tahini
  • 1 clove garlic, crushed
  • 1 teaspoon lemon juice
  • Hot sauce

Method

  • Step 1

    Preheat the oven to 400°F. In a bowl, mix the oil and spices, adjusting to taste. Place the cauliflower on a baking sheet and coat with the sauce. Mix around evenly and pour any extra oil onto the baking sheet. Make sure that all the florets are covered in oil and that there’s a thin layer of oil at the bottom of the tray as well.

  • Step 2

    Bake for about 40 minutes, flipping once halfway through (or until perfectly brown and crispy all around. Keep an eye on it!) When flipping halfway through, you may need to drizzle on more oil if you see the pan has dried out.

  • Step 3

    For the yogurt tahini sauce, mix the yogurt, tahini, lemon juice, crushed garlic, and season with salt.

  • Step 4

    Serve the cauliflower immediately while still hot and crispy with a drizzle of yogurt tahini and hot sauce. Enjoy!
