As promised yesterday, here's the tutorial for the bread lamination, excuse my amateur approach that's the best I could do it right now 😉Hope you like it, would love to hear your thoughts about it. * Please tag me in your posts and use #sourdough_mania when you try it out, really looking forward to seeing your laminated sourdough bread&co 😻 * A few tips for lamination: * Your dough shouldn't be over-hydrated, mine was between 65-68%. * First dough was about 250gr flour. The second and third about 150gr flour each. All were autolysed for an hour (only water and flour, plus cocoa in various amounts for the natural colouring, and a bit of spirulina for the darkest dough), then I added starter and salt. And kneaded well, did 1 series of stretch&fold. After one hour I started laminating. * After I did that I put the dough in the banneton and prooved at 21 degrees about 12 hours, until nice and puffy. Baked on stone, 15 minutes with steam and then 30 minutes without it. * Check the scoring in one of my previous #sourdoughmania_video. * In this video I did 3 letter folds, in my previous turmeric&red paprika bread I did only 2. I made a new batch of donuts today, here's the video, couldn't resist posting it, so fluffy and nice, search my recipe under hashtag sourdoughmania_recipe (used a bit more butter in these, instead of 30g I used 40g, and more rum, with a bit less milk. And the crumb 😉 couldn't resist the 3-colour lamination I did not so long ago and decided to give it a go once more. Used 3 parts of the same dough, low hydration (65-68%) and coloured 2 parts with different amounts of cocoa, the darker one also contained a bit of spirulina. So if you look really carefully, you'll see there's two brown tones in there 😇 the flavour was so chocolately, and it smelled amazing during and after the bake 😻 * * Do you like it? As promised, here's the baked bread from yesterday's scoring video (slide for more pics). You can see that the first wheat stalk didn't quite open up, it's because I didn't cut it deep enough, have to excuse me as I was so excited 😇Might have left it in the oven about 5 min too long, so the colour is a bit darker, this happens when you're working on something else and slightly forget on your bread in the oven. 🙈 If you haven't seen my yesterday's video with tips and tricks, do check it out. * * So what do you think? It's here, finally; my very first scoring #sourdoughmania_video, had quite a few troubles uploading it from my old phone to the tablet, but it's here, quality-wise not the best though I'll improve that too. Thanks to my hubby for patiently filming me 😁 I have to admit I had stage fright; my hands were shaking when I finished scoring the batard but I hope you'll like it😇EDIT: the scoring lame is from Mure&Peyrot 👍 * Have a look and tell me what you think of it please? Really looking forward to your feedback. If you think it's useful, please share/tag your friends. 😘🤗 * A few tips for scoring your dough based on my experience: * I usually put my dough (if not baking straight from the fridge following a long cold fermentation) in the fridge when I preheat the stone in the oven (for about 45 minutes or up to an hour), so the scoring is much easier that way. Though this one in the video was not refrigerated prior to scoring due to low hydration. * It's easier to score low hydration dough. So start with a low hydro for practice. If the dough is slightly overfermented, use shallow cuts so you won't deflate it or don’t cut it at all. * Prewet/oil your blade. Sometimes it's good to let the things, events, even bread, go their own way and develop their own path. They just might turn out into something beautiful and unexpected. We don't always have to control everything, do we 😉This is a 100% whole rye sourdough bread (the recipe was already posted a while ago, check hashtag sourdoughmania_recipe to find it). * I left it unscored to see how it would turn out, and was pleasantly surprised when I took it out of the oven. Had to let it cool for at least 12 hours, it's the hardest part with rye bread, I know some even let it stand for 24 but I can't. Then sliced it in half and made two people happy with it. RECIPE ALERT: It's Sunday and a perfect day to bake some hamburger buns. If you love milky and buttery brioche buns, then these are the ones you're looking for 😇 Slightly sweet and cotton-soft crumb will go well with your hamburger patty, trust me, extensively tested 😋 I like to smear mine with extra butter and toast before assembling my burger 🙈 * Here's it is: 150 g sweet starter (@thequestforsourdough, fed at least twice), see my previous #sourdoughmania_recipe posts on how to make one. 400 g T500 flour (like all-purpose) 100 g T850 flour (bread flour) 2 eggs (108 g) 100 g milk 90 g water 8 g salt 10 g sugar And 70 g butter * Add flour and sweet starter to the mixer bowl, all other ingredients except butter mix together so they dissolve. Slowly add the mixture to the bowl while kneading. Knead with a machine to develop a nice dough structure (smooth), then slowly add room-temperature butter and knead again (knead quite long so your dough will develop nicely and be silky smooth - the key to soft buns). The dough should rise for about 40% in the container, not more, shape the buns, egg wash (1 egg, a table spoon of milk, pinch of salt), cover with cling foil and leave to proove until nice and puffy (mine took about 4-5 hours at 21 d. Celsius). Preheat oven to 200 degrees Celsius, and give another round of egg wash, sprinkle with poppy/sesame seeds and bake until nice and brown (mine took about 30 minutes I think). * When you make these, tag me in your posts please and use hashtag sourdough_mania 👍 Will you give this recipe a try? Waited patiently till today to cut into yesterday's 45% stone-ground wholewheat bread (recipe in my previous post), and I think it looks rather nice 😊could have pushed the hydration and the fermentation a bit more but I love that there is always room for improvement 👍 * I normally never cut my bread in half but start at the heal and move towards the middle. But I gave half of this to my neighbours for breakfast 😋 * Sharing sourdough bread is as much fun as baking it, if not even better 😍to see the joy in people's eyes - priceless! What do you think?
