You might have seen some delicious and soft buns in my story not so long ago ?these are quite traditional for Slovenian cuisine (called ''buhtlji'' or ''buhteljni''), as well as for other European countries. They can be filled with jam/curd/ground poppy seeds etc. As I love experimenting, I decided to use the sweet starter and made a sourdough version of these sweet rolls and filled them with homemade black currant jam. The crumb was so soft and flavourful, definitely a keeper!??

Swipe to see another pic (hurrah for the new IG function) ? * Sweet starter (@thequestforsourdough) * 1. step 25g 80% starter 50g Manitoba flour (I use @mulinomarino organic Manitoba flour) 12g sugar (unrefined, brown) dissolved in 20g water * When doubled, add: 100g Manitoba flour 25g sugar in 45g water * When doubled, use it in the final dough. The whole procedure for the sweet starter takes about 1.5 days. * Ingredients for the dough: 500g Manitoba flour or any other strong flour (100%) 210g milk (42%) 20g sugar (4%) 70g water (14%) 9g salt (1.8%) 200g sweet starter (40%) * Mix all the ingredients into a nice and smooth rather stiff dough. Refrigerated overnight. * Lock-in butter: 300g butter (60%) * Next day leave the dough at room temperature for about 45 minutes (at 21 C). In the meanwhile beat the butter and roll to a thickness of 0.5 cm in 21-cm square. It should be mouldable, if it's too soft, freeze it for 5 minutes.Lock in butter and do 3 series of letter folds, put in fridge for 30 minutes after each fold. * After the final fold, wrap the dough in cling foil, refrigerate. Next morning roll it to 0.4cm thickness, cut in triangles and roll to croissants. Brush with a mixture of egg, half teaspoon cream and pinch of salt. Cover the pan with cling foil. Proof till puffy and about 2 times (2.5x) their original size (at 21 C 8-9 hours). * Brush again with the leftover mixture. Bake first 5 minutes at 220 C in a preheated oven (thank you for this advice, Ralph @breadworks_2) then lower the temperature to 190 C, bake until golden brown. Sometimes it's good to let the things, events, even bread, go their own way and develop their own path. They just might turn out into something beautiful and unexpected. We don't always have to control everything, do we ?This is a 100% whole rye sourdough bread (the recipe was already posted a while ago, check hashtag sourdoughmania_recipe to find it). * I left it unscored to see how it would turn out, and was pleasantly surprised when I took it out of the oven. Had to let it cool for at least 12 hours, it's the hardest part with rye bread, I know some even let it stand for 24 but I can't. Then sliced it in half and made two people happy with it. Happy others - happy me ? * Can you see the letter A, my initial as in Anita? ?Ever attempted 100% rye sd bread? Just in case you wondered how the scored dough from my previous post turned out, here's the video and some pics 😉 The corn cob didn't turn out exactly as planned but the bread itself was utterly delicious😋 I used 20% corn flour, milk, water, bread flour and all-purpose flour (the locally available organic ones that don't soak up lots of water, need to improve my process a bit for the next time)👍 * Ever tried using corn flour in your sourdough bread? There's is no feast or holiday without this traditional Slovenian nut roll named ''potica'' (the most popular nut filling used is walnut filling). Nowadays, it's baked with yeast but my version uses sweet stiff sourdough, what else😁 The dough is a brioche dough (you can use my donuts recipe). I rolled the dough a bit too thin this time, need to make it thicker (let's say about 1-0.8cm). It was baked in a traditional stoneware mold that I heavily buttered to prevent sticking👍 * Check the video on how to make one and I'll post a baked version in the evening together with the recipe for the walnut filling 😋 * Do you have a special type of bread/sweet bread you traditionally make for holidays?
