ingredients
- 1 1/2 pounds boneless chicken breast or thighs
- 3/4 cup sweet onion, chopped
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon chipotle powder
- 1/2 teaspoon oregano
- 1/2 teaspoon cumin
- 1 (14.5 ounce) can Red Gold Petite Diced Tomatoes
- 1 (10 ounce) can Tomato Love Diced Tomatoes with Green Chilies
- 3/4 cup chicken stock
- 1 (10 ounce) can black beans (drained and rinsed)
- Juice from 1/2 a lime
- Toasted or fried flour tortillas (fajita size), for assembling
- Optional Toppings: Guacamole Cheese (such as Pepper Jack, Monterrey Jack, Cjoita, Mexican blend) Grilled or sauteed corn Jalapenos, sliced thin Shredded lettuce Cilantro Sriracha Sour cream or Mexican table cream
Method
Step 1
Combine spices to make the seasoning and use half to season chicken breasts.
Step 2
Place chicken in your Instant Pot, Ninja Foodie, or pressure cooker (if it has saute mode, saute your onions for a couple of minutes, then add your chicken and saute on each side for a minute. If it does not you can skip this step).
Step 3
Add tomatoes, chicken stock and remaining spice mixture to the pot and set pressure for 10 minutes. Typically it takes about 10 minutes to come up to pressure.
Step 4
Carefully release pressure when finished, remove lid and add in the beans and lime juice. Stir to combine.
Step 5
When ready, assemble your tostadas, first spread guacamole (or smashed avocado) onto your crisped up tortillas, top with some of the shredded chicken followed by cheese(s), cilantro, lettuce, etc and enjoy!
