Listen, this chai spiced cake is creamy, dreamy, delicious, but I would make it again JUST for how good it makes my house smell. Of course, I made the chai spice mix from scratch.

ingredients
For the Chai Spice
- 6 sticks cinnamon
- 3 pieces dried ginger
- 1 star anise
- 6 cardamom pods
- 3 cloves

For the Spice Cake
- 1 tablespoon chai spice mix
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking soda
- 1 teaspoon salt
- 1/2 cup butter
- 1/4 cup olive oil
- 4 large eggs
- 1 cup buttermilk

For the Simple Syrup
- 1/2 cup water
- 1/2 cup sugar

For the Cream Cheese Frosting
- 8 ounces cream cheese
- 1 tablespoon vanilla extract
- 4 cups powdered sugar
- 1 pinch salt
- 1 pinch chai spice mix
Method
Step 1
Preheat your oven to 350 F and line a 9x13 baking dish with butter and parchment paper and set it aside.
Step 2
Place all the chai spice ingredients in the Nutribullet® Ultra and use the 30 second cycle to make a fine powder.
Step 3
Combine the chai spice mix with flour, baking soda and salt in a bowl and set aside. Beat the olive and room temperature butter with the sugar until light and fluffy.
Step 4
Then beat in one egg at a time, scraping the sides until the batter is fully combined and pale yellow in color.
Step 5
Then alternating, mix the dry ingredients and the buttermilk into the batter in 3 increments each. Add 1/3rd of the dry ingredients, mix, then 1/3 of buttermilk, mix, then another 1/3rd of the dry ingredients, etc. until all the ingredients are combined. Be careful not to overmix here.
Step 6
Pour the batter into the buttered pan and bake for 25-30 minutes.
Step 7
While the cake bakes, make the frosting by beating the room temperature butter with the cream cheese until light and fluffy, about 4 minutes, then add the vanilla, and slowly beat in the powdered sugar. (Hot tip: Run the sugar through a mesh strainer to help avoid clumps in the batter.
Step 8
Make the simple syrup by bringing the water and sugar to a simmer, turn off the heat as soon as all the sugar is dissolved. Allow it to cool, then pour into a spray bottle.
Step 9
Once the cake has baked, and a toothpick comes out with just a little crumb, place it on a cooling rack and spray with the simple syrup.
Step 10
Allow the cake to cool completely, then frost and decorate as desired.
