Preheat your oven to 350°. Line cookie pans with parchment paper or silicon baking mat.
In the bowl of stand mixer fitted with the paddle attachment, cream together butter and sugar until pale and fluffy - about 5-7 minutes. Scrape down the sides of the bowl and add egg and vanilla; beat until fluffy.
In a small bowl, mix together flour, baking soda, and salt. Add to the wet ingredients, beating on low speed until just combined. Add in the sprinkles and beat until evenly distributed.
Using a cookie scoop, scoop your batter out onto silicon baking mat. Make sure you leave some space between each cookie because they will spread as they bake.
Bake for 8-11 minutes or until the edges are a light golden color.
