- 1 cup oat flour
- 1/2 cup almond flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup coconut sugar
- 1 egg or flax egg
- 1/4 cup non-dairy milk
- 1/4 cup non-dairy yogurt
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1/2 cup fresh blueberries
- 1 teaspoon cornstarch / arrowroot powder
- 2 medium bananas

- 1/2 cup almond flour
- cinnamon
- 1 tablespoon maple syrup
- 1 tablespoon coconut oil
Method
Step 1
Preheat the oven to 356 F / 180 C. Line an 8 x 8 baking tin with parchment paper and set aside.
Step 2
Start by making the streusel: Mix the almond flour, cinnamon, maple syrup, and coconut oil together. Set it aside.
Step 3
Make the cake: In a mixing bowl, start by mixing all the dry ingredients until combined. In another bowl, mix all the wet ingredients together. Pour the dry the wet and stir until a smooth batter.
Step 4
Mix the cornstarch / arrowroot powder with blueberries. Fold into the batter and mix well. Pour the batter into the baking tin, and sprinkle with the streusel topping.
Step 5
Bake for 30-35 minutes. Remove from the tins and allow to cool fully on a wire rack. Enjoy!
