ingredients
- 1 package Siete Whole30 Approved Mild Taco Seasoning
- 2 tbsp avocado oil
- 1 sweet potato,
- 1 package Siete Grain Free Burrito Size Tortilla
- 1 cup hummus
- 1 cup guacamole
- 1 cup spinach
- 1/2 cucumber, thinly sliced
- 1 tomato, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 2 cups broccoli or alfalfa sprouts
Method
Step 1
Preheat the oven to 350°F/180°C.
Step 2
In a large bowl, combine the taco seasoning with the avocado. Add the sweet potato and make sure it’s thoroughly coated with the seasoning mixture.
Step 3
Bake for 15-20 minutes or until fork tender. Set aside.
Step 4
Warm the tortilla according to package instructions.
Step 5
Add a generous amount of hummus and guacamole to the center of each tortilla.
Step 6
Add spinach, sweet potato, cucumber, tomatoes, bell peppers, and bean sprouts.
Step 7
Fold in both sides of the tortilla and roll it up tightly. Cut in half and serve.
