ingredients

  • 1 Siete Grain Free Burrito
  • 3 tbsp Siete Whole20 Approved Jalapeno Hot Sauce
  • 1/2 cup dairy-free yogurt
  • 2 tbsp pumpkin seeds
  • 2 limes, juiced
  • salt and pepper
  • 1 head romaine lettuce, chopped
  • 1/2 cup cilantro, chopped
  • 2 tomato, chopped
  • 1 avocado, diced
  • 1 chicken breast, grilled
  • 1 can black beans, drained and rinsed
  • 1/2 cup pumpkin seeds, roasted and salted

Method

  • Step 1

    Preheat oven to 350°F/180°C.

  • Step 2

    Invert a 4 or 6-inch oven-safe bowl and place it on a baking sheet.

  • Step 3

    Preheat a skillet or flat griddle over medium high heat and warm the tortilla on both sides until completely pliable. Place tortilla over the oven-safe bowl.

  • Step 4

    Bake the tortilla bowl for 10-12 mins until completely crispy. Remove from the oven and let cool for 1-2 mins.

  • Step 5

    FOR DRESSING: In a blender combine the Jalapeño Hot sauce, yogurt, lime juice, pumpkin seeds, salt and pepper and blend until smooth. Refrigerate until ready to serve.

  • Step 6

    Fill the tortilla bowl with the romaine lettuce and cilantro. Top with the avocado, tomatoes, grilled chicken, black beans, pumpkin seeds and add a dollop of the jalapeño lime dressing. Garnish with lime wedges and minced chives.
