Cabbage Salad with Ginger Dressing

This easy salad recipe is low-carb and high in flavor. A base of cabbage, cucumbers, and bell pepper, comes together with fresh herbs and a zesty ginger dressing. For protein, top the salad with nuts, tofu, fish, or meat.

Salad Base


  • 1/2 green cabbage
  • 4 persian cucumbers, finely chopped
  • 1 red bell pepper, finely chopped
  • 3 scallions, finely chopped
  • handful of fresh cilantro, finely chopped



  • 1 large chunk ginger, peeled and roughly chopped
  • 5 cloves of peeled garlic
  • 4 tablespoons avocado mayo
  • 5 tablespoons rice vinegar
  • 4 tablespoons sesame oil
  • 2 tablespoons sriracha
  • sea salt
  • ground pepper

Salad Base


  • Step 1

    Prepare the ingredients and combine in a large bowl.

  • Step 2

    Add the ingredients to a food processor and grind until everything is well combined.

  • Step 3

    Coat the salad with the dressing, toss the salad, covering each vegetable.
