ingredients
- 1 pound pasta of choice, boiled al dente, with 1/4 cup pasta water reserved
- 1 pound Italian ground turkey sausage
- 1 shallot, diced
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 cup mushrooms, sliced `
- 1/2 red bell pepper, sliced `
- 1/2 jar (15 oz) marinara sauce
- 1 cup heavy cream
- 1 cup baby spinach
- Parmesan cheese and crushed red pepper, for topping
Method
Step 1
In a skillet over medium-high heat, brown the Italian ground turkey sausage with one diced shallot. Once browned, remove from the skillet and set aside.
Step 2
In the same skillet over medium heat, add olive oil and minced garlic. Stir in one diced shallot, sliced mushrooms, and red bell pepper. Sauté for 1 minute until vegetables are slightly tender.
Step 3
Add in the marinara sauce to the skillet and stir.
Step 4
Pour in heavy cream and the reserved 1/4 cup of pasta water. Stir to combine.
Step 5
Reintroduce the browned Italian sausage to the skillet, add baby spinach, and incorporate the drained pasta. Stir well to coat everything evenly.
Step 6
Top the dish with Parmesan cheese and crushed red pepper according to your preference.
Step 7
Serve immediately.
