Yolked crispy rice and smoked salmon

ingredients
- 1 cup Rice
- 2 cups Water
- 2 tablespoon Butter
- 1 tablespoon Everything bagel seasoning
- 2 Egg yolks
- 2 slices of Smoked salmon
- 2 tablespoon Cream cheese
- 1 teaspoon Chives
Method
Step 1
Cook rice according to package instructions. (1 cup rice, 2 cups water)
Step 2
Coat a non-stick skillet generously with butter.
Step 3
Into cooked rice, add 1tbs of everything bagel seasoning. Stir to incorporate.
Step 4
Transfer rice to butter coated pan, pressing in evenly.
Step 5
Cook on very low heat covered for about 10 minutes. Remove lid, and use a rubber or offset spatula to trace butter around edges of the pan, allowing it to melt down the edges of the rice. Gently use a rubber spatula to slightly lift edge and check for golden brown crisp.
Step 6
When rice seems to be done (if you shake the pan softly, it should move freely once the rice has crisped) make a small well in the center of the rice- careful not to break through the bottom.
Step 7
Drop yolks into the well, and cover with the rice that was moved aside.
Step 8
Turn off the heat, grab a plate that will cover the entirety of the pan... place it over and flip rice out onto pan.
Step 9
Top with smoked salmon (or other desired protein), chives, and a dollop of softened cream cheese or everything bagel dip (my favorite from Trader Joe’s!)
