Red wine simmered pasta sauce

ingredients

  • 1 small chopped onion
  • 1 tablespoon olive oil
  • 3 cloves chopped garlic
  • 1 teaspoon fresh thyme
  • 1 sprig chopped fresh rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 3 chopped tomatoes
  • 1 cup red wine (one you would drink!)
  • 2 28 ounce cans crushed tomatoes
  • 1 tablespoon brown sugar
  • 1 cup fresh grated parmesan cheese
  • salt, to taste

Method

  • Step 1

    In a large pot, heat olive oil to shimmering.

  • Step 2

    Add onion, and cook on medium 3-5 minutes until softened.

  • Step 3

    Add herbs, and spices. (not salt yet) and garlic.

  • Step 4

    Add tomato paste, stir to coat onions/garlic. And cook for 1-2 minutes until red begins to deepen.

  • Step 5

    Add tomatoes, and stir again.

  • Step 6

    Add red wine, allow to simmer for 3-5 minutes.

  • Step 7

    Add crushed tomatoes, and brown sugar. Bring to a gentle boil... reduce heat to low, and cover... simmer for around one hour (the longer, the better really.)

  • Step 8

    Remove lid, and scoop half of the sauce, with the larger tomato pieces into a blender. Puree until smooth. Return to pot.

  • Step 9

    Turn heat off. Add parmesan cheese to pot, and stir to melt.

  • Step 10

    Taste, and add salt as needed.

  • Step 11

    Serve over your favorite pasta, with a glass of the same wine you cooked with :)
