ingredients
- 4 chicken breasts, seasoned with salt and pepper
- 1/4 cup gluten free all purpose flour
- 1/4 teaspoon each salt and pepper
- 1 teaspoon dried basil
- 1 tablepsoon olive oil
- 5 cloves crushed garlic
- 3/4 cup white wine
- 3/4 cup chicken stock
- 1/4 cup balsamic vinegar
- 1 cup cherry tomatoes
- 1/2 cup fresh chopped basil
- 4 slices fresh mozzarella
- balsamic glaze, to finish
Method
Step 1
Preheat oven to 350, and season chicken breasts with salt and pepper.
Step 2
Combine flour, salt and pepper, and dried basil in a shallow dish. Toss chicken through to coat, shaking off excess.
Step 3
Heat olive oil in an oven safe skillet, and cook chicken for about five minutes, then flip to get color on both sides.
Step 4
Add crushed garlic to pan.
Step 5
Add white wine, chicken stock, and bring to a boil for a few minuets.
Step 6
Reduce to simmer, and add balsamic vinegar, and cherry tomatoes.
Step 7
Transfer pan to oven for 20-25 minutes until chicken has cooked through. You could also simmer on the stove top if you prefer.
Step 8
Once chicken has cooked, add chopped basil, and a slice of fresh mozzarella on each piece of chicken.
Step 9
Allow to set, until cheese has melted. If needed, broil on low for a few minutes to reheat before serving, or help the cheese melt.
Step 10
Give a final drizzle of balsamic glaze over everything. Serve with crusty, toasted bread or over a fresh salad.
