Creamy lemon garlic shrimp pasta

ingredients
- 16 peeled and deveined shirmp (tails on makes for a great flavor... just clean them well!)
- 4 cloves minced garlic
- 1/2 chopped red onion
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- the zest of one lemon
- 1/4 cup olive oil
- 8 pasta
- 1/2 cup white wine (pinot grigio is great!)
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/2 teaspoon kosher salt
- 2 tablespoons cold butter
- 1/4 cup shredded parmesan
- 1 teaspoon parsley
Method
Step 1
In a bowl, combine shrimp with garlic, red onion, red pepper, black pepper, lemon zest, and olive oil. Cover, and refrigerate marinated for about 30 minutes. Set your pasta to boil meanwhile.
Step 2
In a large pan... add shrimp/onion/garlic and cook until shrimp is just cooked through. Maybe 3-5 minutes.
Step 3
Remove from pan, and set aside. Onion/garlic can stay in the pan, but if some comes out that is fine!
Step 4
In that same pan, add white wine, and chicken broth. Simmer about 5-7 minutes to cook off alcohol.
Step 5
Add warmed cream (just heat 30 seconds in the microwave first so it doesn't break in the sauce!) and simmer an additional five minutes.
Step 6
Add a sprinkle of kosher salt, and turn off heat.
Step 7
Return shrimp/onion/garlic back to pan.
Step 8
Add cold butter to reduce the heat, and add cooked pasta. Toss together.
Step 9
Finish with a good squeeze of lemon, and a pinch of parsley. Taste, and add additional lemon or salt if needed.
Step 10
Serve alongside the same wine you cooked with :)
