For the Anchovy Stock
ingredients
- 10 dried anchovies
- 3 inch piece dried kombu
- 4 cups water
For the Braised Pork and Kimchi
ingredients
- 1 pound kimchi
- 1/4 cup green onion, sliced 1/2 inch thick on the bias
- 1/2 pound pork shoulder
- 2 cups anchovy stock
- 1/2 cup kimchi brine
- 2 tablespoons soju
- 1 tablespoon sesame oil
- 1 tablespoon garlic, chopped
- 2 tablespoons sugar
For the Anchovy Stock
Method
Step 1
In a medium pot, add the anchovies, dried kombu and water.
Step 2
Boil for 5 minutes over high heat and then for 20 mins over medium heat.
Step 3
Strain and reserve anchovy stock.
For the Braised Pork and Kimchi
Step 1
Place the kimchi, kimchi brine, pork, green onion, soju, sugar, garlic, and the anchovy stock in a dutch oven.
Step 2
Bring to a boil for 10 minutes and reduce to a simmer for 1 hour.
Step 3
Remove from heat and serve immediately over rice.
