For the BBQ Sauce

ingredients

  • 1/2 cup grapeseed oil, or olive oil
  • 2 onions, finely chopped
  • 4 cloves garlic, crushed
  • 4 cups cherry tomatoes
  • 1 cup ketchup
  • 1/4 cup dark soy sauce
  • 2 tablespoons sriracha
  • 2 tablespoons maple syrup
  • 2 tablespoons dark brown sugar
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons liquid smoke
  • 1 teaspoon ground cumin

For the Sandwich

ingredients

  • 1 cup pulled jackfruit
  • 4 burger buns, toasted
  • Coleslaw

Method

  • Step 1

    To make the BBQ sauce: Heat the oil in a saucepan over medium. Add the onion and sauté for a few minutes, until it becomes translucent. Add the garlic and cook 1 more minute. Add in the remaining sauce ingredients and stir to combine. Cover, reduce heat to simmer, and cook for 7-10 minutes, or until the tomatoes are burst and sauce is reduced. Remove from the heat and allow to cool fully before blending in a food processor to a smooth, glossy sauce.

    To make the sandwiches: Stir some BBQ sauce with the jackfruit. Put on bun with coleslaw.
