These mini melt-in-your-mouth brown butter cookie sandwiches are going to be a new holiday cookie go-to. Make a double batch to keep in the freezer.

Cookies

ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup firmly packed light brown sugar
  • 1 egg yolk
  • 2 1/4 cups all purpose flour

Cream Filling

ingredients

  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 4-5 tablespoons heavy cream
  • 1 1/4 cup confectioners sugar

To make the cookies:

Method

  • Step 1

    Cream together butter and sugar. Add egg yolk and mix well. Mix in flour until dough forms. Form into nickel sized balls and space about 2 inches apart on a cookie sheet. press down lightly on each ball of dough with a fork to flatten slightly. Bake at 325 for about 10 minutes until edges and bottom are light brown.

To make the filling:

  • Step 1

    Melt and lightly brown the butter in a pan over the stove. Add the confectioners sugar and vanilla, mix. Add cream until you get a thick frosting consistency.

  • Step 2

    Make sure wafers are lightly cooled. Add frosting to bottom of cookie and top with another to make sandwich cookies. These cookies keep well in the freezer.
