ingredients

  • 4 Greek flatbread
  • 1 cup shredded mozzarella cheese
  • 2 cut into thick slices roma tomatoes
  • olive oil
  • as needed pitted olives
  • 2 teaspoon oregano
  • 4 tbsp fried onions
  • 2 teaspoon black pepper
  • 4 tbsp balsamic vinegar
  • crumbled feta cheese

Method

  • Step 1

    Heat oven to 400°F. Line a baking tray with parchment paper. Put 4 flatbreads on the tray.

  • Step 2

    Sprinkle with equal portions of half of the finely grated mozzarella. Put thickly sliced tomatoes on top.

  • Step 3

    Slice up roasted red peppers and put on top of the flatbread. Drizzle some olive oil. Put halved olives and fried onions. Sprinkle in rest of the mozzarella, oregano and black pepper.

  • Step 4

    Drizzle with balsamic vinegar. Cook in the oven for 12-13 mins till the cheese melts.

  • Step 5

    Serve with crumbled feta cheese.
