ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk, room temperature
- 1/2 cup butter, melted and cooled
- 2 large eggs, room temperature
- 1/2 cup strawberries, diced
- 8 oz cream cheese, softened
- 1 teaspoon vanilla extract
Method
Step 1
Preheat oven to 350 degrees and prepare a 12 cup muffin pan with paper liners.
Step 2
In a medium bowl, whisk together the flour, 1/2 cup sugar, baking powder and salt. Set aside.
Step 3
In a large mixing bowl, add the milk, butter and eggs. Whisk together, then stir in the flour mixture a little at a time - until just combined. Gently fold in the strawberries.
Step 4
Place the softened cream cheese, remaining sugar, and vanilla extract into another small bowl and blend until smooth. Set aside.
Step 5
Fill the muffin liners halfway with with batter. Scoop about one measuring tablespoon of the cheesecake mixture into the centers. Evenly distribute the remaining muffin batter on top of each one to complete the process.
Step 6
Place in the oven to bake for 22 minutes. Allow your muffins to sit in the pan for a bit before placing on a wire rack to cool. Enjoy!
