We don't think of cookies as being particularly refreshing, but this pink lemonade icing over a fluffy sugar cookie proves us wrong. Tangy and bright. So cute, you'd think you bought these from a girl scout bake sale.

Cookie Ingredients
- 1/2 cup (1 stick) butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda

Frosting Ingredients
- 1/2 cup (1 stick) butter, softened
- 3 cups powdered sugar
- 2 tablespoons pink lemonade mix (powder)
- 2 tablepoons milk
Method
Step 1
Preheat your oven to 350 and line a cookie tray with parchment paper.
Step 2
Cream together the softened butter and sugar. Add the egg, vanilla extract and lemon zest. Stir until just combined.
Step 3
Add in the flour and baking soda. Stir until a thick dough forms.
Step 4
Divide and shape into 14 dough balls (about 2 measuring tablespoons each). Place on your prepared baking sheet, about 3 inches apart.
Step 5
Flour the bottom of a glass and use it to gently flatten the balls until they are just a bit more than 1/4 inch thick.
Step 6
Bake for 9 minutes and then place on a wire rack to cool completely.
Step 7
Meanwhile, make the frosting by blending the softened butter in a large bowl until smooth. Add in half the powdered sugar, pink lemonade mix and the two tablespoons of milk. Mix on low until combined. Then, add the remaining powdered sugar and continue mixing until smooth.
Step 8
Spread the frosting evenly over your cooled cookies and enjoy!
