ingredients
- 2 cups plus two tablespoons flour
- 12 tablespoons butter, cold and cut into cubes
- 11 tablespoons ice cold water
- 4 sliced peaches
- 1/4 cup sugar
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
Method
Step 1
To make the dough, add 2 cups of flour into a large mixing bowl. Add the cold and thinly sliced butter and use a pastry cutter or a fork to combine. Work the butter into the flour until you have acorn sized clumps of buttery flour. A few larger pieces of butter remaining in the mixture us fine. Next, add the ice cold water and stir until a dough has formed.
Step 2
Slightly flatten the dough ball into a disc, and then cover it in plastic wrap. Place it in the fridge to chill for 1 hour.
Step 3
Meanwhile, prepare your filling. In a large sauce pan, combine the sliced peaches, sugar, brown sugar, lemon juice, and the remaining flour. Cook on high heat for 5 minutes, stirring often. Pour the filling into a bowl, and allow it to cool completely before spreading it on the dough.
Step 4
Once your dough is chilled, remove it from the plastic wrap and begin to roll it out on a floured surface. You want it to be about 1/2 inch thick. Then, cut eight (6 inch) circles from the dough.
Step 5
Preheat your oven to 400 degrees. Assemble your mini galettes on a lightly floured baking sheet. Place an even amount of filling in the center of each one, leaving 1 1/2 inches of extra space around the edges. Fold this extra space over the filling.
Step 6
Bake your galettes for 25 minutes. Once baked, remove them from the oven and place them on a wire rack to cool. Enjoy!
