ingredients

  • 1 stick softened Butter
  • 1/4 cup plus 2 tablespoons Sugar
  • 1/4 cup plus 2 tablespoons Brown Sugar
  • 1 teaspoon Instant Coffee Powder
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Olive Oil
  • 1 1/4 cup Flour
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoons Salt

Method

  • Step 1

    In a large bowl, cream together the softened butter and both sugars. Add the instant coffee powder, egg, vanilla extract, and olive oil.

  • Step 2

    In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture into the wet one - stirring until just combined. Fold in the chocolate chips. Cover your bowl of dough with plastic wrap, and place it in the fridge to chill for 30 minutes.

  • Step 3

    Once the dough is chilled, preheat your oven to 350 degrees. Roll your dough into balls - about 2 measuring tablespoons each - and place them a few inches apart on a parchment paper lined baking sheet.

  • Step 4

    Bake your cookies for 8-9 minutes. It’s okay if they look a tad underdone - they will continue cooking after being removed from the oven. Place on a wire rack to cool, and enjoy!
