  • 2 very ripe, mashed bananas
  • 1/2 cup (1 stick) butter
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/3 cup chopped (plus more for sprinkling on top) walnuts

Method

  • Step 1

    Preheat your oven to 350 degrees. Prepare a 12 cup muffin tin with paper muffin/cupcake liners.

  • Step 2

    Make browned butter by melting 1/2 cup (1 stick) of butter in a sauce pan on medium high. Once melted, keep cooking and stir constantly as butter begins to foam up. The liquid should turn golden brown. When this is achieved remove from heat and set aside.

  • Step 3

    In a large bowl, combine the mashed bananas and browned butter. Stir in the baking soda, cinnamon, sugar, egg, and vanilla extract. Fold in the chopped walnuts.

  • Step 4

    Add in the flour and stir until just combined. Do not over mix! A few small lumps in the batter are okay. Evenly distribute this mixture into the 12 muffin liners. You want them to be about 3/4 of the way full. Sprinkle some chopped walnuts on top of each one.

  • Step 5

    Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven and set on a wire rack to cool. Enjoy!
