I like to use medium grain rice for any of my fried rice dishes like this Kimchi Fried Rice! U.S.-grown medium-grain rice was the perfect choice. Medium-grain rice is moist and tender, absorbing all that delicious kimchi flavor!

ingredients
- 2 cups U.S.-grown medium grain rice
- 3 garlic cloves, chopped
- 2 green onions, chopped
- 3 tablespoons kimchi
- 1 Thai chili, chopped
- 3 tablespoons kimchi juice
- 4 kaffir lime leaves, chopped
- 1 teaspoon chicken bouillon powder
- 1 teaspoon garlic powder
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 1/2 teaspoons fish sauce
- 1 egg
Method
Step 1
In a pan, sauté green onions and garlic in oil. Add kimchi, Thai chili and day old rice. Sauté for 2-3 minutes.
Step 2
Add kimchi juice, kaffir lime leaves, garlic powder, chicken bouillon powder, salt, pepper, and fish sauce.
Step 3
Mix well and let the rice cook for another 5 minutes. Add additional salt if needed.
Step 4
Cook 1 egg to your liking and then place on top of rice with green onions.
