Quinoa Breakfast Bowl
"This has been my go-to breakfast lately. I ❤ it bc I usually have everything on hand so it's just a matter of frying up the egg. .... Leftover kale + quinoa, sun-dried tomatoes, avocado, and a fried egg. .... If you have leftover quinoa and kale this takes about 5 minutes, so it's perfect for busy mornings ?? .... #breakfastinspo #feedfeed"

Ingredients:

1 cup cooked quinoa 

Handful of kale

Sun-dried tomatoes

1 egg

1/2 avocado

Directions:

Cook quinoa according to package directions. 

Sauté a large handful of kale in 1 tsp olive oil and sprinkle with salt and pepper. 

Fry one or two eggs. 

Serve quinoa topped with kale, sun-dried tomatoes, a fried egg, avocado slices and salt & pepper.
