Quinoa Breakfast Bowl

Ingredients:
1 cup cooked quinoa
Handful of kale
Sun-dried tomatoes
1 egg
1/2 avocado
Directions:
Cook quinoa according to package directions.
Sauté a large handful of kale in 1 tsp olive oil and sprinkle with salt and pepper.
Fry one or two eggs.
Serve quinoa topped with kale, sun-dried tomatoes, a fried egg, avocado slices and salt & pepper.
