ingredients

  • 1 tablespoons oil
  • 2 medium carrot
  • 1 medium onion
  • 6 cloves garlic
  • 5 medium tomato
  • 4 cups chicken stock
  • 1 teaspoons dried basil
  • To taste salt
  • 1 can corn
  • 1/2 teaspoon freshly ground pepper
  • 1 teaspoon sugar
  • 1 teaspoon light soy sauce
  • 3/4 cups cream

Method

  • Step 1

    Cut onions, tomatoes, carrots, and garlic in large chunks.

  • Step 2

    In your soup pot, saute onion, garlic, and carrots for 3-4 minutes, until onions are transparent. Then add tomatoes, soup stock, basil, and salt. Cook for 1 hour.

  • Step 3

    Now blend the soup into a thin paste with an immersion blender. Strain the soup in a coarse strainer to remove tomato seed and other solids.

  • Step 4

    Transfer soup back into the soup pot. Add corn and cook further for 10 minutes on medium-low flame. Cover with lid.

  • Step 5

    Season soup with basil, soy sauce, sugar, and pepper. Just before serving add fresh cream. Serve hot.
