"Vegan corn fritters topped w/ smashed avocado, cherry tomatoes, arugula, and sprinkled with lots of hot sauce. I'm throwing it back to of my 'one month trial of going vegan' nearly five months ago! Five months going strong! I've had the very occasional relapse (pastries are my weakness), but overall I'm happy to say my journey into veganism has been positive and successful! Corn Fritters with Smashed Avocado

Ingredients
1 cup corn kernels
3 green onions/shallots sliced
1/2 cup garbanzo bean/chickpea or gluten-free flour
Salt and pepper
1/2 ripe avocado, smashed
Small handful of cherry tomatoes, cut in quarters
Handful of arugula/rocket.
Directions
Mix all the ingredients together.
Add around 1/2 cup of water, and mix well until the desired consistency has been achieved (You want it to be a thick batter). Spray a skillet/frypan with cooking oil. Place a heaped tablespoon of mixture into the pan.
Cook until golden brown on both sides.
Serve topped with mashed avocado, cherry tomatoes and arugula/rocket! Serve warm.
Makes 8 fritters.
