Avocado and Egg Breakfast Sandwich
Breakfast sandwiches never fail me on mornings I’m EXTRA hungry (more so than my normal always hungry self?) been a minute since had I had one in my life so I thought it was only fitting that i whip up this bad boy as a post workout breakfast today! what’s inside -@provisionsbypaige

ingredients

  • 1/2 tbsp oil
  • 2 large eggs
  • 2 slices sprouted whole wheat bread
  • 1 avocado, smashed
  • 1/4 cup sliced cherry tomatoes
  • Handful of micro greens

Method

  • Step 1

    Heat oil in a pan over medium heat. Crack the eggs into the pan and cook for 3-5 minutes until crispy and cooked through.

  • Step 2

    Spread the mashed avocado onto one slice of bread. Top with sliced tomatoes, the egg, microgreens, and the second slice of bread.
