- 1/2 cup applesauce
- 2 tablespoons molasses
- 1/2 cup almond flour
- 1/2 cup oat or all purpose flour
- 1 teaspoon vanilla
- 1 teaspoon cinnamon, ground
- 1 teaspoon ginger, ground
- 1 teaspoon baking powder
- 1/8 teaspoon cloves, ground
- 1/8 teaspoon nutmeg, ground
- a pinch of salt
- frosting, to decorate
Method
Step 1
Preheat oven to 350ºF and grease a loaf pan.
Step 2
In a mixing bowl, whisk egg, applesauce, and molasses until smooth.
Step 3
In a separate bowl, whisk together flour, almond flour, baking powder, baking soda, spices, and salt.
Step 4
Fold together wet and dry ingredients, being careful not to overmix. Pour into prepared pan and bake 40 minutes (until knife comes out clean.
Step 5
Decorate with frosting and a drizzle of molasses.
