  • 1 egg
  • 1/2 cup applesauce
  • 2 tablespoons molasses
  • 1/2 cup almond flour
  • 1/2 cup oat or all purpose flour
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon ginger, ground
  • 1 teaspoon baking powder
  • 1/8 teaspoon cloves, ground
  • 1/8 teaspoon nutmeg, ground
  • a pinch of salt
  • frosting, to decorate

Method

  • Step 1

    Preheat oven to 350ºF and grease a loaf pan.⁣

  • Step 2

    In a mixing bowl, whisk egg, applesauce, and molasses until smooth.⁣

  • Step 3

    In a separate bowl, whisk together flour, almond flour, baking powder, baking soda, spices, and salt.⁣

  • Step 4

    Fold together wet and dry ingredients, being careful not to overmix. Pour into prepared pan and bake 40 minutes (until knife comes out clean.

  • Step 5

    Decorate with frosting and a drizzle of molasses.
