Frittata's are such a great way enjoy a meal that feels fancy but is in fact super easy - I've even done them as make-aheads. This one is a great choice, it's nutritious as it is beautiful! I love that it uses Feta cheese, which is lower in saturated fat than many other cheeses, plus high in protein. And of course, the abundance of greens here adds a great dose of vitamins and minerals to this protein powerhouse.
