Homemade Shanhai Pork Belly
Ingredients:
500g diced pork belly
1/2 c light soy
1 tbsp dark soy
1/2 c sugar
1 small piece of Chinese dried mandarin peel
2 small pieces of ginger.
Directions:
Cook diced pork belly in light soy, dark soy, sugar, dried mandarin peel (use a small piece of orange peel if you don't have it), and ginger.
Fry the pork belly in a pan (no oil needed) for 3 min before adding all ingredients in and some water if it looks dry.
Cover and Cook on low to medium heat for 1 hour. Add little bits of water as you go to keep it moist.
After 1 hour, open the lid and turn up the heat to reduce any liquids.
Serve over rice!
