"Oooh don't ya just love the smell of freshly baked banana and date cake wafting through your house Ummm? I fancied experimenting with a spot of healthy baking! If you are at a loose end this Sunday why don't you use up those old black spotty nanas sitting in your fruit bowl and make something amazing with them This cake is dairyfree, refined sugar free, free from all nasties and can be glutenfree. It's so delicious to enjoy with a cupa or smothered in almond buttah. want the recipe Oh go on then.
Banana and date cake;
2 ripe mashed bananas
1 1/2 cups of all purpose gluten free or spelt flour
1 1/2 tablespoon of baking powder
1/2 cup of ground almonds
2 tablespoons of milled flaxseed
3/4 cup of chopped dates
3/4 cup of almond milk
1 tbs of vanilla extract
1/3 cup of sweetener of choice. I use honey or maple syrup but stevia or coconut sugar work to.
Method:
Put ground almonds, dates, banana, flaxseed, sweetener, vanilla and milk in one bowl and combine the mixture evenly. Should be a liquid consistency. Then slowly tip in the flour mixing as you go along until you get a nice batter, you may need a little more milk but judge for yourself. Pour batter mix into a greased loaf tin and cook in the middle of the oven on 160c for around 40-45 mins.
Make sure it's cooked in the middle by using a skewer.
This was trial and error for me and you may need to tweek it accordingly"
