Elderflower Marshmallows

Ingredients:
1 cup warm, freshly brewed elderflower tea⠀
6 TBSP gelatin⠀
1/3 cup honey⠀
1 TBSP arrowroot powder plus extra for dusting⠀
1/4 teaspoon salt⠀

Directions:⠀
Grease a baking pan with a little bit of coconut, a brownie or lamington sized pan will work great.⠀

Pour 2/3 of the warm tea in a food processor with a whisk attachment, or a mixer like a kitchenaid or even a handheld electric beater. Sprinkle the gelatin over the tea and leave to swell.⠀

Then place the rest of the tea in a small saucepan over very low heat, add the honey and stir to dissolve, do not boil.⠀
Once the honey is dissolved, remove from the heat.⠀

Start the food processor up and let it whisk the mixture for about 30 seconds, then with the machine running, pour the tea & honey mixture in a very slow stream, then add the arrowroot. The mixture will start growing in volume and become thick and opaque, this might take about 10 minutes of whisking.⠀

Turn off the machine and scoop the thickened mixture out into the greased pan and set in the fridge.⠀
Leave for a few hours to set, then turn out of the pan and slice into squares and dust them in some arrowroot to give them that powdery marshmallow texture.⠀
