ingredients

  • 1 3/4 cup water
  • 1/2 cup sugar
  • 2 pints kumquats
  • Juice of 2 oranges
  • Juice of 1 lemon
  • 8 large strawberries (optional)

Method

  • Step 1

    Soak the kumquats in a bowl of cold water for ~2 days, the water should be changed often.

  • Step 2

    Place the softened kumquats whole in a blender and puree. Pass the mixture through a sieve. Do the same with the strawberries if using. Mix the juice with the lemon juice and orange juice.

  • Step 3

    To make a simple sugar, heat water, and sugar, and bring to a boil for about 10 minutes. Add the mixed juices and mix well.

  • Step 4

    Pour into a tubberware and freeze in the freezer for about 3 hours. Then mix everything well with a fork and scrape it up. Freeze again for 3 hours and scrape up again. You can repeat this as many times as you like, it softens the sorbet, and the ice crystals are destroyed.

  • Step 5

    *If you want it sweeter, add 1/4 cup more sugar to the syrup. Alternatively, If you have an ice cream maker, you can use that.
