Adobong Talong - Eggplant Adobo from the Philippines

ingredients
- 6 thin Asian Eggplants
- 1 bulb chopped Garlic
- 1 tsp whole black Peppercorns
- 3 Bay Leaves
- 50 ml Soy Sauce
- 20 ml white Vinegar
- Oil
Method
Step 1
Cut the eggplants into 3-4 cm long pieces. If you use a fat eggplant just cut it into long sticks.
Step 2
In a wok or heavy pot, sauté the garlic, peppercorns, and bay leaves. Add the eggplants and fry for about 5 minutes. You may have to do this in 2-3 batches for this quantity.
Step 3
Then put everything back into the wok. Mix the soy sauce, vinegar and about 100 ml water together and add. Turn the heat to medium and cover the pot or wok.
Step 4
Simmer for 8-10 minutes, occasionally turning the eggplant until the sauce becomes slightly oily. Serve with rice!
