Dessert, Summer, Good For A Crowd
Crust:
2 cups almonds
Soft big dates
2 Tbsp coconut oil, melted
1 Tbsp cinnamon powder
1/2 tsp vanilla
Place the almonds in a food processor and process into a rough flour-like mixture.
Add the remaining ingredients and pulse to incorporate.
Press the mixture into the bottom of a springform cake pan and set aside while you make the cake.
Cake:
2 cups cashews, soaked
2 cups coconut cream
1 cup lilac blossoms (plus more for garnish)
¼ cup almond milk
2 Tbsp coconut oil, melted
1 tsp vanilla
1/3 cup agave syrup
Juice 1 lemon
Handful of blueberries
Combine all of the ingredients in a food processor and process until smooth.
Pour over the crust and set in the freezer or refrigerator until solid.
Garnish with more lilac blossoms.
